Are they listening?
I know not everyone agrees with me, but I don't believe that in-home devices like Amazon's Echo are listening to your conversations. They're listening for their "wake up word", but that's it.
As I said, many disagree, based on things they've experienced. My take is that there's always another more mundane explanation.
